I'm Squashed

All I've felt like doing this week is drinking red wine and eating spaghetti underneath a blanket. It's cold. It's dark. I know I've been longing for fall weather for weeks, but when it first hits its still an adjustment for my body. Go to the gym? Ha! Make complicated recipes? No way. That's why roasted anything is my go-to this time of year. I thought I'd try my hand at some squash, which ended up delicious, but I couldn't muster the pretty half moon shapes that I saw on Pinterest without almost cutting my fingers off so ended up with awkward uneven chucks of yumminess for me this week. On another note there's no salt on this. Yes, no salt, which is a big deal for me. I crave the taste of salt but I notice when I load my food up with it I actually eat a lot more. So for the fall trying to make a concerted effort to reduce that practice. Not sure how I'll do, but figured its good to have a goal. Hoping to start next week with more energy and desire to embrace the cold. To roast, just chop up and toss in olive oil, red pepper and Trader Joe's 21 Seasoning Salute. So good!
