Chickpea Pasta with Pesto and Roasted Tomatoes

It's very rare in this life that we get to have our cake and eat it too, hence the saying. However, there are a couple times where it magically happens so you should always be on the look out, fork and knife in hand. One such magical opportunity presented itself to me in the form of Banza Pasta. Everything in moderation is always a good goal, but frankly, I'm bad at that, so I rarely eat pasta anymore. It's one of my trigger points so unless you take the bowl away from me I'll eat till its all gone. Boo, I love pasta. Wait, all hope is not lost, enter Banza. It's made primarily of chickpeas so it's actually really good for you - lots of protein and fiber. A hair chewier than normal pasta, it also works great for those of us who tend to over cook our pasta even though we know its should be al dente. Americans. Roast some tenderly sweet baby tomatoes, toss in pesto and viola! You have a fabulous healthy meal. Easy peasy today as far as recipes go - wanted to share this great find. Bon appetito!
