Zucchini Fries
Before you say I'm not doing this I will never give up my regular fries, just gimme a minute. I'm not giving up my regular fries either. But if I ate them every time I had a craving for them, I'd probably be a french fry by now. So in between the times when I indulge in the unmistakable salty wonderland of the potato version, zucchini fries have become a favorite replacement. Did I mention you get to cover them in Parmesan cheese before you bake them? Thought that might get your attention. Follow the easy recipe below for a low-carb alternative that still tastes fabulous. Enjoy!
Zucchini Fries
2 large zucchinis
1 egg
1 cup Parmesan cheese
salt and pepper to taste
Cut the zucchini's into fry size strips. Dip the strips in the egg and then the Parmesan cheese. Lay the strips in a single layer on a parchment covered tray and sprinkle with salt and pepper. Bake at 400 degrees for about 15 minutes till cheese is brown and bubbly. Turn at least once. Serve immediately.
Dipping Sauce
1 tablespoon mayonaise
1 tablespoon Dijon mustard
Mix and enjoy!
