I came across a recipe for chocolate dipped candied blood oranges a while ago and I thought it would be the perfect out of the ordinary, (somewhat) healthy desert if you were staying in and cooking for Valentine's Day. You can make the oranges ahead of time and then dip them in chocolate right before serving. Please also refer to my post a few weeks ago where I outlined my cooking philosophy of "eating clean with a dirty mind". I imagine after a bottle of wine you could get into a whole lot of awesome shenanigans with a handsome man and a bowl of melted chocolate. Your welcome and happy Valentine's Day to all! Here's how I made them.
Candied Oranges
2 blood oranges
2 cups of water
3/4 cups of sugar
1 tablespoon dark corn syrup
Dipping Chocolate
1 large bar of good quality chocolate
1 tablespoon unsalted butter
Slice the oranges into 1/4 inch slices. Bring the water, sugar and corn syrup to a boil in a wide shallow pan and then place orange slices in the liquid in a single layer. Reduce to a simmer and cook for at least 50 minutes or until translucent. Let them cool on a wire rack for at least 24 hours until tacky. When ready to serve, melt the chocolate and butter in a double boiler until smooth. I dipped the oranges in the bowl I melted the chocolate in. This resulted in ridiculous yumminess, but not ridiculously pretty food. In hindsight, I should have put the chocolate in something like a coffee mug and then dipped the oranges. I think the chocolate would have coated more evenly and just turned out a bit more picture worthy. But no matter, these little babies were delicious and the recipe was actually really easy to pull together. I would also recommend letting them set for about 10 minutes in the refrigerator on a wax paper-covered tray just to give the chocolate a couple minutes to set. Enjoy on Valentine's or any other day that suits your fancy!
