Banana Ice Cream (Kind of)


I don't have a lot of willpower when it comes to food. If it's in front of me I'll generally eat it, even if I'm full. Not so great. But if I'm cooking at home or bringing my lunch/breakfast I tend to have better luck because I can choose my own portion size and make sure there aren't any bad options around for me to take advantage of. I hope that these moments when I'm smart about it will then balance out the work dinners, airport food, nights out with friends, holidays, etc. where I know I'm going to indulge because of (please see the first sentence).

Last week with the kiddos I ate enough pizza and ice cream to kill a small horse so I'm trying to make this week a little lighter and get things back to normal. Unfortunately, the taste of the Gelati Celesti Salted Caramel Ice Cream I had is fresh in my mind. I remember how rich and creamy it was, how sweet and salty made the perfect combination. STOP! STOP THINKING ABOUT IT!

Let's think of an alternative.....thank you Pinterest! Cut to today's post, fabulous Banana Ice Cream I made on Sunday. Well, kind of. It's actually frozen bananas with a little unsweetened almond milk and a topping of walnuts tossed in maple syrup and a pinch of salt. Is it as decadent as the real thing? No. But is it pretty damn good? Yes. If I hadn't known, I would have thought it was real ice cream and the topping is so yummy it really satisfies your taste buds. I also think this would be a great alternative to ice cream for your kiddos and they'd have fun helping you out in the kitchen laying the banana slices on the tray. You can find the recipe here.
