I'm Toast
I need a vacation. We'll get to that in a second. This time last year I was in San Diego at a conference. Wanting to fully embody the phrase "When in Rome", I ordered Avocado Toast one day after a morning run. I LOVE avocados. If left to my own devices, I would sit with a spoon and a salt shaker and go to town. But I'd never thought of them as a breakfast food. The dish was ridiculously yummy and I was full for hours.
In season again, I've been enjoying them for breakfast this summer and remembering my awesome trip to the West Coast. Be creative with your toppings. I love to add some fresh salsa or herbs, or something as simple as olive oil, salt and pepper. Have fun and enjoy!
Let's revisit the vacation thing. Did I mention I need one? Yea, I'm kind of toast. My brain needs a break. I need some quite. I need to take Miss A for walks on the beach. I need to have a beer on the balcony at 12pm just because I can. TWO WEEKS! Two weeks beach....I'm comin for ya!
