A Piece of My Heart



I've never understood why comfort food gets a bad wrap. Frankly, sometimes I need a little comforting. I especially love the late summer comfort that tomatoes and mayonnaise afford me in any combination you can muster. I'll eat them on a train, on a plane and even with green eggs and ham Sam I Am. So when I was perusing Pinterest for something yummy to make this weekend I got inappropriately excited when I came across this recipe for Tomato Pie. Did I mention there's bacon in the crust? Your welcome. 

It's a bit involved but totally worth it. Getting as much liquid out of the tomatoes is key, so don't skip any steps or you'll end up with soup instead of a pie. And I doubled most of the herbs and added white wine because I didn't have the vinegar on hand I thought I did. I also added a teaspoon of Dijon mustard because I think it adds something special to almost any dish. This is one of those great recipes that you can add/subtract and play around with the herb combinations to your heart's content. My heart needs some contentment right now.
