A Spring Palate



If you're like me, all of my friends, everyone I work with, the barista at Starbucks, the person who does my taxes and pretty much everyone else I've come into contact with in the past two weeks you are painfully ready for spring. You are sick of the cold. Sick of the darkness. Sick of being sequestered inside. Sick of the looming blues and complacency that seem to cover us like a blanket during the winter. Luckily spring is right around the corner, but it hasn't taken root just yet, so we are given glorious days of warmth and possibility here and there that we must seize and enjoy. 

There is a palpable excitement that accompanies these types of days. Summer planning ensues and you become somewhat high just thinking of all of the fun you'll have in just a few short weeks. I love it! See despite what you've heard, despite what some people like to say, and despite what seems impossible because it is dark at 5pm.....life is what you make it. It may not be easy or simple but it can be done if you want it badly enough and you treat others with respect along the way (sorry emotional tangent. I warned you about looming winter sadness:)). 

This past weekend in Richmond was beautiful and luckily I was able to enjoy it. We went on a bike ride Saturday and Sunday cooked with the kitchen door open and the breeze floating in. Miss Austen had free reign of the backyard as well so she was in heaven. We made a great pasta dish which you can find here. It had all the ingredients for a fabulous spring meal....lemon, basil, pine nuts, Parmesan and more. The key is to double the garlic and be judicious with your lemon juice. Go slowly..the pasta will tell you when it's had enough. 

Cheers to opening a cold bottle of chardonnay, drinking it with friends and all of the fun and new beginnings spring will bring....
